- Soak soya granules and chunk for minimum 3 hours, After that boil the it till first boil and remove in a strainer to remove excess water, squeeze the extra water once soya chunks cool down, keep aside they are ready to use.
- Wash rice and keep aside, I have used regular rice, since my daughter doesn't like Basmati, you can use basmati rice of any good brand

- In a pressure cooker, heat oil and ghee, add cumin seeds and once they splutter add hing and chopped onions.

- Once onions change colour add ginger garlic mint paste(homemade is best), and allow raw smell to go, once done add tomato puree and simmer gas

- In the mean time, in a bowl take curd and add turmeric powder, red chilli powder, coriander powder, biryani masala and mix.

- Add the curd mixture to onion tomato mix and stir, after a minute or two add soya chunks and granules. Mix properly to coat soya chunks with masala.

- Keep it on sim for 5 minutes regularly stirring, now add 2.5 cups water and allow to boil.

- As soon as water boils add salt, mix and add rice.

- Once the rice is added, close the lid of cooker and cook till 2 whistles, and simmer the gas and cook again for 4 to 5 mins.

- Once the steam is released, open the pressure cooker and garnish biryani with chopped coriander leaves.

- Serve Biryani with curd, raita, papad, It is a very good dish for tiffin and even for main course, full of proteins enjoy...
