Note:- it’s a sugar free cake hence I have used honey cream frosting homemade.

- Dry ingredients:-
- 1 cup heaped all purpose flour (maida)
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon Nescafé coffee granules
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3 tablespoons tutti frutti
- 2 tablespoons stone’s chocolates
- 1/2 cup jaggery powder(alternatively we can use brown sugar)
- Wet ingredients:-
- 3-4 tablespoons flavourless oil (or we can take ghee clarified butter)
- 1 teaspoon vanilla essence
- 1/2 cup milk (little more can be adjusted for consistency of batter)
- 1-1/2 teaspoon white vinegar
- For honey cream frosting:-
- 4-5 tablespoons honey
- 1 cup fresh cream
- 3-4 drops green food colour (optional that’s my choice to make it attractive)
Steps to make to make Microwave baked jaggery cake with dash of honey
- Firstly take half cup milk add coffee granules & vinegar set aside to curdle.further whisk jaggery powder & oil until it’s slightly creamy now add in vanilla essence & milk mix it nicely gradually mix all dry ingredients together roll tutti frutti in the dry flour mix and start to add with wet ingredients in batches whisking in one direction.add the coffee mix.


- Adjust batter to the ribbon flow consistency adding little milk.prior cake preps I have kept the cake tin lined with cooking sheet dusting with cocoa powder this will keep the cake base equally brown upside down.now preheat microwave for 5 minutes then add batter in cake tin tap on kitchen counter to avoid air bubbles.pop it in microwave for 6 minutes with two intervals.

- Until the cake is being baked let’s prepare instant honey cream frosting simply add fresh cream whisk until slightly creamy add honey and food colour mix well and it’s ready let it rest in refrigerator.further remove the cake from microwave let it cool down to room temperature then simply remove the ring our moist cake is ready give it a quick milk wash


- Finally remove the cooking sheet and set the cake on a cake board carefully as it’s very moist and spongy now spread the honey cream frosting and garnish with a tablespoon of honey drizzle it randomly and I have used it’s cake crumbs from the leftover in the cake tin and garnish it accordingly.refrigerate it & serve it cool.
